  • 2 garlic cloves, minced
  • 1 large egg yolk
  • 1t salt • ½ C EVOO (mild/med)
  • 1T lime juice
  • ½ C Persian Lime EVOO*

*May use any flavor EVOO in place of Lime, such as Tuscan Herb, Lemon, Garlic, etc.



  1. Pulse the garlic & salt in a food processor for a few seconds.
  2. Add the egg yolk & lime juice.
  3. With motor running on a lower speed, slowly add the plain EVOO, then slowly add the Lime EVOO in a thin, steady stream.
  4. Once well-blended, taste & finish with salt if needed.
  5. Use anywhere in place of mayonnaise – burgers, sandwiches, dips, etc.
