Ingredients:
  • 2 oranges, peeled and sliced
  • 2 blood oranges, peeled and sliced
  • 1 fennel bulb, thinly sliced
  • 1 red onion, thinly sliced
  • 1 cup mixed greens (arugula, spinach, etc.)
  • 1/4 cup Outer Banks Olive Oil Co. lemon olive oil
  • 2 tablespoons Outer Banks Olive Oil Co. Sicilian lemon balsamic vinegar
  • Salt and pepper to taste
  • Fresh mint leaves, torn (for garnish)
  • Optional: 1/2 pound cooked shrimp or grilled calamari
Instructions:
 
Prepare the Salad:
  • Arrange the orange and blood orange slices on a large platter.
  • Top with thinly sliced fennel, red onion, and mixed greens.
Dress the Salad:
  • In a small bowl, whisk together the lemon olive oil and Sicilian lemon balsamic vinegar. Season with salt and pepper to taste.
  • Drizzle the dressing over the salad.

Garnish and Serve:
  • Garnish the salad with fresh mint leaves.
  • If adding seafood, top the salad with cooked shrimp or grilled calamari.
  • Serve immediately and enjoy the refreshing and vibrant flavors.
