Our partner producer (SAOV) in Portugal employs an advanced high-vacuum technique during the malaxation process. By removing all oxygen at this critical stage—where the oil remains the longest and is most vulnerable to oxidation—they protect the oil’s integrity.

This innovative, highly technical method helps preserve the phenolic compounds, maintain the oil’s full chemistry and vibrant flavor profile, while significantly lowering other oxidation markers.
