Coconut-Lime Shrimp:

Prep Time          10 to 15 min

 

Ingredients:

  • ¾ C Coconut Balsamic                                      
  • ¾ C Persian Lime EVOO                                     
  • 1 lb large prepped shrimp
  • 1 small chili of your choice, finely chopped
  • 1 T fresh lime juice
  • 1 T garlic, finely chopped
  • 1 T fresh chopped cilantro
  • sea salt & fresh ground pepper to taste

 

Preparation:

  1. Preheat oven to 375°. Combine chilies, garlic, cilantro, lime juice and coconut Balsamic, and lime oil in a shallow dish. Marinate shrimp in mixture for 10-15 min.
  2. Season with salt & pepper, remove from dish and place on lightly oiled baking dish (can use more Lime EVOO) and bake for 5 min, depending on the size of the shrimp. Remove from oven & serve.
*Sauté shrimp on med/high heat (1-2 min per side) or grill on pre-soaked skewers (1-2 min per side) instead of baking.
