🌿 The Farm-to-Table Flavor Profile

This tenderloin gets its depth from two key ingredients:

  • Mushroom & Sage Olive Oil: Earthy and aromatic, this oil brings a wild, woodsy richness that enhances meats and roasted vegetables alike.

  • Fig Balsamic Vinegar: Naturally sweet and deeply complex, this vinegar balances the savory flavors and gives the roast its signature glaze and caramelization.

Together, they create a flavor profile that’s bold, balanced, and totally unforgettable.


🍽️ The Recipe: Balsamic Beef Tenderloin

Serves: 4–6

Ingredients:

  • 1½ pounds beef tenderloin roast, trimmed and tied

  • 2 tbsp Mushroom & Sage Olive Oil

  • 3 tbsp Dijon mustard

  • 3 tbsp Fig Balsamic Vinegar

  • Coarse sea salt & freshly cracked black pepper

Directions:

  1. Preheat oven to 500°F. Trim tenderloin of silverskin and excess fat. Tie in 1½–2 inch intervals to keep shape.

  2. Brush roast with Mushroom & Sage Olive Oil and place it on a rack in a roasting pan. This helps the heat circulate evenly for a beautiful crust.

  3. In a small bowl, combine Dijon mustard and Fig Balsamic Vinegar with a pinch of salt. Brush the mixture all over the roast. Sprinkle generously with cracked pepper.

  4. Roast for 25–28 minutes or until a meat thermometer registers 125°F for medium-rare.

  5. Remove from oven, tent loosely with foil, and let it rest for 10–15 minutes before slicing.

Serve with your favorite sides—roasted potatoes, green beans, or even a tangy vinaigrette-dressed salad.
