Prep Time 5 min (plus marinating time of 30 min to overnight)
½ C Traditional Balsamic*
1 t kosher salt
2 T brown sugar
½ t black pepper
2 cloves garlic
1 t rosemary
¼ C EVOO*
1 ½ lb skirt steak
In a blender, combine all marinade ingredients except oil; run until combined, then slowly add oil until thoroughly mixed in. Peirce meat with a fork a place in a large ziploc bag. Add marinade, refrigerate, and allow to marinate from 30 min to overnight.
Heat grill to high, remove meat from marinade and grill 3-4 min per side, or until cooked to desired temperature.
Slice thinly, crosswise to the grain. Plate slices, drizzle with balsamic and serve.
*You may substitute any flavor of oil or vinegar you like!
