Our Bloody Mary Mix makes for an unbelievably rich and easy tomato base for a quick seafood stew. The natural horseradish and jalapeño provide a gentle, complex warmth perfect for a chilly October evening.

Prep Time: 10 minutes | Cook Time: 20 minutes | Yields: 4 servings

Ingredients:

  • 2 tablespoons Garlic Olive Oil (or your favorite Outer Banks Olive Oil Co. Olive Oil)

  • 1 small onion, finely chopped

  • 1 bell pepper (any color), chopped

  • 1 cup Outer Banks Olive Oil Co. Bloody Mary Mix

  • cup clam juice or seafood stock

  • 1 pound mixed seafood (scallops, shrimp, cod, or mussels work great)

  • cup fresh parsley, chopped, for garnish

  • Salt and pepper to taste

  • Crusty bread for serving

Instructions:

  1. Sauté the Base: Heat the Garlic Olive Oil in a large pot or deep skillet over medium heat. Add the onion and bell pepper and sauté for about 5 minutes, until softened.

  2. Build the Sauce: Pour in the Bloody Mary Mixand the seafood stock/clam juice. Bring the mixture to a simmer and let it cook for about 5 to 8 minutes, allowing the sauce to slightly reduce and the flavors to marry.

  3. Add the Seafood: Season the sauce with salt and pepper. Add your seafood to the simmering sauce. Cover the pot and cook for another 5 to 7 minutes, or until the shrimp are pink and the scallops are opaque (mussels should be opened). Do not overcook.

  4. Serve: Ladle the stew into bowls. Garnish generously with fresh parsley and serve immediately with a generous slice of crusty bread for soaking up that "scary good" sauce.
