Ingredients:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 eggplant, sliced
  • 1 red onion, sliced
  • 1/4 cup Outer Banks Olive Oil Co. Greek Oregano Olive Oil
  • 2 tablespoons Outer Banks Olive Oil Co. Grapefruit Balsamic Vinegar
  • Salt and pepper to taste
  • Fresh basil leaves, chopped

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, toss the sliced vegetables with Outer Banks Olive Oil Co. Greek Oregano Olive Oil, Outer Banks Olive Oil Co. Grapefruit Balsamic Vinegar, salt, and pepper.
  3. Grill the vegetables for about 5-7 minutes on each side, or until they are tender and slightly charred.
  4. Remove from the grill and arrange on a serving platter. Sprinkle with fresh basil leaves.
  5. Drizzle a bit more of our Greek Oregano Olive Oil over the top before serving.
