What You'll Need:
1/3 cup sliced almonds
1 lb. green beans, trimmed and cut into bite-size pieces
1/4 cup water
1/2 teaspoon sea salt, divided
2 tablespoons OBOO Milanese Gremolata EVOO
Juice and zest of 1/2 lemon
2 teaspoons Dijon mustard
Freshly ground black pepper, to taste
1/4 cup crumbled feta cheese
How to Make It:
Toast the Almonds: Warm a skillet over medium heat. Add almonds and toast for 1-3 minutes, stirring until fragrant. Remove and set aside.
Cook the Green Beans: In the same skillet, add green beans, water, and 1/4 teaspoon salt. Cover and cook, stirring occasionally, for 7-10 minutes until just tender. Uncover, raise heat to high, and cook until water evaporates. Remove from heat.
Whisk the Dressing: In a bowl, whisk together OBOO Milanese Gremolata EVOO, lemon juice, Dijon mustard, remaining salt, and black pepper.
Bring It Together: Add almonds and half the feta to the green beans. Drizzle with dressing, toss to coat, and adjust seasoning if needed.
Serve: Transfer to a serving bowl, top with remaining feta and lemon zest. Serve immediately.
