Ingredients:

  • 1 flatbread (store-bought or homemade)

  • 1 tbsp Greek Leek Olive Oil

  • 1 small onion, thinly sliced

  • ½ cup fresh pineapple slices

  • ⅓ cup goat cheese crumbles

  • 1 tbsp Pineapple Balsamic

  • ½ tsp sea salt

  • ¼ tsp black pepper

  • Fresh basil or arugula for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Place the flatbread on a baking sheet.

  2. Sauté the onions: Heat Greek Leek Olive Oil in a pan over medium heat. Add sliced onions and cook until soft and caramelized, about 5-7 minutes.

  3. Assemble the flatbread: Spread the caramelized onions evenly over the flatbread. Scatter the fresh pineapple chunks and goat cheese crumbles on top.

  4. Bake: Place in the oven and bake for 8-10 minutes, or until the edges are golden and the cheese is slightly melted.

  5. Finish with flavor: Drizzle with Pineapple Balsamic, sprinkle with salt and pepper, and garnish with fresh basil or arugula if desired.

  6. Serve & enjoy! Slice and watch it disappear.
