1 flatbread (store-bought or homemade)
1 tbsp Greek Leek Olive Oil
1 small onion, thinly sliced
½ cup fresh pineapple slices
⅓ cup goat cheese crumbles
1 tbsp Pineapple Balsamic
½ tsp sea salt
¼ tsp black pepper
Fresh basil or arugula for garnish (optional)
Preheat oven to 400°F (200°C). Place the flatbread on a baking sheet.
Sauté the onions: Heat Greek Leek Olive Oil in a pan over medium heat. Add sliced onions and cook until soft and caramelized, about 5-7 minutes.
Assemble the flatbread: Spread the caramelized onions evenly over the flatbread. Scatter the fresh pineapple chunks and goat cheese crumbles on top.
Bake: Place in the oven and bake for 8-10 minutes, or until the edges are golden and the cheese is slightly melted.
Finish with flavor: Drizzle with Pineapple Balsamic, sprinkle with salt and pepper, and garnish with fresh basil or arugula if desired.
