Grilled Scallops with Blood Orange EVOO:

Ingredients:

  • 2 T minced scallions          
  • ¼ C Blood Orange EVOO
  • 1 lb scallops
  • 1 clove garlic, minced
  • ¼ t fresh ground black pepper                                                                        

Preparation:

  1. Combine scallions, garlic, EVOO and pepper in a large glass bowl. Add scallops to bowl and marinate for 30 min.
  2. Thread scallops on four skewers and grill over medium heat for 8 min, turning several times during cooking and basting with remaining marinade.
