🍽 Moroccan-Spiced Harissa Chicken Thighs with Balsamic Herb Glaze

 

Ingredients:

  • 6 bone-in, skin-on chicken thighs

  • 3 tbsp Harissa Olive Oil

  • 1 tbsp smoked paprika

  • 1 tsp ground cumin

  • 1 tsp ground cinnamon

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • 2 tbsp Neapolitan Balsamic Vinegar

  • 2 garlic cloves, minced

  • Fresh cilantro or parsley for garnish

 

Directions:

  1. Preheat oven to 400°F (200°C).

  2. In a bowl, whisk together Harissa Olive Oil, paprika, cumin, cinnamon, salt, and pepper.

  3. Rub the mixture all over the chicken thighs. Place on a baking sheet lined with parchment or foil.

  4. Roast for 35–40 minutes, until skin is crispy and internal temp hits 165°F.

  5. While the chicken rests, warm Neapolitan Balsamic with minced garlic in a small pan for 2–3 minutes.

  6. Drizzle the herb glaze over the chicken and garnish with fresh herbs.

Turmeric Couscous with Toasted Almonds & Apricots

 

Ingredients:

  • 1 cup couscous

  • 1 cup hot chicken or vegetable broth

  • 1/2 tsp turmeric

  • 1/4 cup chopped dried apricots

  • 1/4 cup sliced almonds, toasted

  • 1 tbsp Harissa Olive Oil

  • Salt to taste

 

Directions:

  1. Place the couscous, turmeric, chopped apricots, and salt in a heatproof bowl.
  2. Pour the hot broth over the mixture, cover tightly, and let it sit for 5 minutes.
  3. Fluff with a fork, drizzle with Harissa Olive Oil, and top with toasted almonds.
