In large skillet, heat shrimp until liquid starts to come out. Drain liquid.
Pour 2-3 T Lemon EVOO in skillet & toss shrimp until both sides turn pink (about 5 min) then remove from heat.
Let shrimp rest in skillet for a few minutes to absorb flavors.
Season with salt & cracked black pepper, serve on platter & enjoy.
Variations:
Add dried chili peppers after cooking to add heat
Add a couple of teaspoons of your favorite balsamic to add sweetness.
Try Blood Orange EVOO, Honey-Ginger balsamic, or, for some HEAT, try Baklouti Green Chili Oil.
Peel shrimp before cooking & serve over rice or pasta and add cooked veggies of your choice that have been mixed with the shrimp in the skillet to absorb the flavors.
Use sliced chicken or turkey in place of shrimp for a lower calorie option.
