Fresh Fig, Prosciutto & Arugula Salad with Parmesan Shave:

Ingredients for Vinaigrette:

  • 2 T Fig Balsamic  
  • ½ t Maille Dijon mustard    
  • fresh ground pepper   
  • 6 T EVOO  

 Ingredients for Salad:              

  • 2 large bunches Arugula
  • 6 green or purple figs
  • 6-8 large Prosciutto slices
  • 1/3 LB shaved Parmigiana Reggiano cheese

 

Preparation:

  • In a small bowl, whisk together vinegar, mustard, salt & pepper to taste for vinaigrette.
  • Discard stems of arugula, transfer leaves to large bowl.
  • Trim tough ends from figs and cut each into 8 wedges. Cut prosciutto into bite-size pieces.
  • Toss arugula w/ prosciutto, sprinkle with shaved Parmesan & dress w/ vinaigrette.
