Refreshing Pear & Cinnamon Spritz

Ingredients:

  • 1 oz Outer Banks Olive Oil Co. Cinnamon Pear Balsamic Vinegar
  • 2 oz vodka
  • 3 oz sparkling water
  • 1 pear slice, for garnish
  • Ice

Instructions:

  1. Fill a cocktail shaker with ice. Add the Cinnamon Pear Balsamic Vinegar and vodka. Shake well to combine.
  2. Strain the mixture into a glass filled with ice.
  3. Top with sparkling water and stir gently.
  4. Garnish with a pear slice and serve immediately.

Tiramisu alla Romana

Ingredients:

  • 1 cup strong coffee, cooled
  • 1/2 cup liqueur (optional)
    • Amaretto: An almond-flavored liqueur that can add a fourth flavor to tiramisu
    • Marsala wine: A traditional choice
    • Coffee-based liqueur: Can be used to make coffee-flavored ladyfingers
  • 3 large eggs, separated
  • 1/2 cup granulated sugar
  • 8 oz mascarpone cheese
  • 1 cup heavy cream, whipped to stiff peaks
  • 24 ladyfingers
  • 2 tbsp cocoa powder, for dusting
  • Dark chocolate shavings, for garnish

Instructions:

  1. In a shallow dish, combine the cooled coffee and coffee liqueur.
  2. In a bowl, beat the egg yolks with the sugar until thick and pale. Add the mascarpone and mix until smooth.
  3. In a separate bowl, whip the heavy cream to stiff peaks and fold it into the mascarpone mixture.
  4. In another bowl, beat the egg whites until stiff peaks form and gently fold them into the mascarpone mixture.
  5. Dip each ladyfinger briefly into the coffee mixture and arrange a layer in the bottom of a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone mixture.
  7. Dust the top with cocoa powder and refrigerate for at least 4 hours, preferably overnight.
  8. Garnish with dark chocolate shavings before serving.
