Ingredients:

  • 2 tbsp Outer Banks Olive Oil Co. Certified Ultra Premium Extra Virgin Garlic Olive Oil
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced
  • 1 cup Arborio rice
  • 1 tsp smoked paprika
  • 1 pinch saffron threads
  • 1 can diced tomatoes (14 oz)
  • 3 cups chicken or vegetable broth
  • 1 cup frozen peas
  • 1 lb. seafood mix (shrimp, mussels, clams)
  • 1 lemon, cut into wedges
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat the Premium Extra Virgin Garlic Olive Oil in a large pan over medium heat.
  2. Add the onion and red bell pepper, and sauté until softened, about 5 minutes.
  3. Stir in the Arborio rice, smoked paprika, and saffron. Cook for 2-3 minutes until the rice is well-coated.
  4. Add the diced tomatoes and broth, bringing the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Stir in the peas and seafood mix, cover, and cook for an additional 10 minutes or until the seafood is cooked through.
  7. Season with salt and pepper to taste.
  8. Garnish with lemon wedges and fresh parsley before serving.
