Peel & Eat Shrimp – Easy Appetizer:

Ingredients:

Preparation:

  1. In large skillet, heat shrimp until liquid starts to come out. Drain liquid.
  2. Pour 2-3 T Lemon EVOO in skillet & toss shrimp until both sides turn pink (about 5 min) then remove from heat.
  3. Let shrimp rest in skillet for a few minutes to absorb flavors.
  4. Season with salt & cracked black pepper, serve on platter & enjoy.

Variations:

  • Add dried chili peppers after cooking to add heat
  • Add a couple of teaspoons of your favorite balsamic to add sweetness.
  • Try Blood Orange EVOO, Honey-Ginger balsamic, or, for some HEAT, try Baklouti Green Chili Oil.
  • Peel shrimp before cooking & serve over rice or pasta and add cooked veggies of your choice that have been mixed with the shrimp in the skillet to absorb the flavors.
  • Use sliced chicken or turkey in place of shrimp for a lower calorie option.
